principles while still meeting consumer needs would be to source produce
locally. Using local farmers and ranchers would serve as a farm to table
concept. Farmers could provide foods such as veggies, fruits, and herbs.
While ranchers could provide the meats. This would give shoppers the option
to support the local farmers without providing too much change to their daily
shopping experience. This would ensure that the consumers needs are still
met.
What are the benefits and risks associated with incorporating
farm-to-table principles into the grocery chain's supply chain?
The benefits associated incorporating farm to table principles include
supporting local farmers, while providing consumer with healthier food
options. If the grocery chain were to use a local farmer as a supplier it would
keep the business in the local economy rather than using a larger supplier.
Meanwhile also providing benefits to the consumers, because there would be
healthier options. There would be use of more sustainable practices like
avoiding genetically modified organisms and instead do things like using
organize fertilizer. These benefits could ultimately provide the grocery chain
with more profit due to consumers wanting to support sustainability
practices. Some risks of incorporating farm to table principles include the
potential of not enough. With a smaller farm they might not have the
equipment to produce enough quantity. Or if the conditions are not good one
season, the farm might not be able to provide an alternative solution to
produce enough produce. Other concerns to consider is that produce without
pesticides is not as shelf stable so it may go bad faster, and could result in a
loss for the store. Overall the positive benefits of sustainability outweigh the
negative risks associated with incorporating farm to table practice.
What data and communication with the local farms is necessary
for the supermarket to implement this endeavor?
If planning to implement a change such as using a local farm for a supplier it
is important to consider how communication may differ. I think it would be
wise to assign one person to be put in charge of managing farm to table
relations. This would ensure constant communication between the supplier
and supermarket chain officials. It would be important to communicate about
growing rates for the produce along with harvest dates and any shortages the
store might have that the farmers can fulfill. The individual must also carry
the communication along to other suitable executive members of the
supermarket chain.
What factors or metrics will determine whether you, as the COO,
support applying farm-to-table principles to the supermarket, and
why?
With implementing a practice such as farm to table it is vital to manage
whether it is financially sustainable for the supermarket chain to do so.
Important metrics may include reviews or higher produce sales. Reviews
could serves as a valuable metric as the provide great insight. A review could
state that they are enjoying the new produce, or that they support the
supermarkets sustainability practices. Another metric to consider would be
produce sales. Monitoring the sales before and after implementing the farm
to table practice could be beneficial to see whether or not sales have gone up
or down.
