Raw Milk Consumption: Weighing Natural Appeal Against Public Health Risks
In recent years, a growing number of consumers have shifted toward “natural” foods in hopes of
improving their health. Among these products is0raw milk, or unpasteurized milk, which some
believe retains more nutrients and enzymes than its pasteurized counterpart. However, the choice
to consume raw milk carries serious public health implications. This paper explores how
pasteurization affects the nutritional quality of milk, outlines the disease risks of consuming raw
milk, compares raw and pasteurized milk safety, offers advice to farmers, and ends with a parent-
focused newsletter summarizing key takeaways.
Pasteurization and Nutritional Quality
Pasteurization is the process of heating milk to a specific temperature (typically 161°F for 15
seconds) to kill harmful pathogens such as0Listeria monocytogenes,0Salmonella, and0Escherichia
coli. Critics argue that pasteurization reduces the milk’s nutrient content; however, scientific
evidence suggests that these effects are negligible. Pasteurization has a minimal impact on most
nutrients and does not significantly reduce the levels of calcium, protein, or vitamin D (U.S.
FDA, 2022). While heat-sensitive B vitamins such as B1 and B6 may be slightly reduced, these
are not major contributors to the overall nutrient profile of milk. Therefore, the concern over
nutritional degradation is largely overstated.
Disease Risks from Raw Milk Consumption
Raw milk is a known vehicle for transmitting foodborne pathogens. Between 1993 and 2012, the
Centers for Disease Control and Prevention (CDC) documented 81 outbreaks linked to raw milk,
resulting in nearly 1,000 illnesses and 73 hospitalizations (CDC, 2017). Pathogens found in raw
milk can cause severe gastrointestinal illness, miscarriage, kidney failure, and death, particularly
in high-risk populations such as children, pregnant women, the elderly, and
immunocompromised individuals. Unlike pasteurized milk, raw milk lacks a kill-step to
eliminate pathogens before consumption.
Factors Increasing Disease Risk
Several factors amplify the risks associated with raw milk. These include unsanitary milking
practices, poor animal health, unclean equipment, and inadequate refrigeration. Small farms
often lack the infrastructure for consistent microbiological testing, making it difficult to
guarantee product safety. Furthermore, bacteria can multiply rapidly when milk is stored
improperly, even for short periods. All of these conditions make raw milk a high-risk product for
contamination.
Risk Comparison: Raw vs. Pasteurized Milk
Statistical analyses underscore the increased risks associated with raw milk. According to the
CDC, raw milk is0150 times more likely0to cause foodborne illness than pasteurized milk, and
illnesses from raw milk are013 times more likely0to result in hospitalization (CDC, 2017). These
stark differences support the conclusion that pasteurized milk is far safer for public consumption.
Advising Farmers Selling Raw Milk
In jurisdictions where raw milk sales are legal, farmers have a responsibility to minimize risk.
Key steps include regular pathogen testing, strict sanitation protocols, proper refrigeration, and
honest consumer labeling. Farmers should also educate customers about the potential health
hazards. While raw milk may appeal to those seeking a natural lifestyle, the product must be
handled with extreme care to avoid public health consequences.
