Project Guidelines

The student will select a restaurant specializing in the cuisine of a particular culture (Andean, Ethiopian, Thai, Greek, etc.) which he or she has not yet experienced, and eat lunch or dinner at that establishment, paying particular attention not just to the choice of dishes or of the ingredients, but also of the nuances presentation, appearance and any other cultural attitudes that may be presented during the meal. Were any food taboos noticed? Any particular manner or style of eating that was observed? The student will then summarize the experience in a 2-3 page paper that includes the name of the restaurant, the affiliated culture, the food items that were consumed, and any other pertinent information.

Grading rubric:

45 – 50 points: Critical thinking and reflection are clearly demonstrated. Insights are generated and ideas are related to concepts discussed in classroom lecture and assigned readings. Paper is structurally sound and virtually free of technical writing errors.

40 – 44 points: Some critical thinking is demonstrated and ideas reflect on classroom materials. Paper is cogently written with few technical writing errors.

35 – 39 points: Project was completed with either a minor deficiency in the exercise or the paper. There is limited reflection on main course ideas or the paper has significant technical writing errors.

30 – 34 points: Project was completed with either a major deficiency in the exercise itself or the paper or minor deficiencies in both areas. There is little to no description of the food, restaurant, etc. or the paper has many and various types of technical writing or compliance errors.

29 or less points: Project failed to meet minimum guidelines. Food/restaurant did not meet the definition of “ethnic” or paper was not produced or had serious compliance and technical writing errors.
