Resistance temperature detectors consist of fine coiled wire wrapped around a ceramic or glass core, which makes it very delicate. There are many advantages, the accuracy seems to be the best with these sensors. They have great stability and repeatability and do well in commercial environments around motors or high voltage since they are immune to electrical noise. RTD's are typically used in air conditioning and refrigeration, stoves, grills and food processing equipment. 

The disadvantages with RTD's are that they typically are higher in cost and cannot be grounded so they have a slower response time. 

Thermocouples are easy to use and very durable. They're consisted of two different kind of wire legs, fixed together creating a junction. They are small and have a fast response time. Thermocouples are good for a wide range of temperatures and resist shock and vibrations. A voltage is generated which correlates to the temperature, so they work best with high temperatures. They're most popular in boilers, hot water heaters, ovens and hospital thermometers. 

Thermocouples do not have good repeatability or long term stability.
