As you have learned in this module, Americans are woefully overfed, yet  undernourished. Additionally, diseases like type 2 diabetes are on the  rise. Fortunately, simple dietary changes such as increasing your fiber intake can provide huge dividends with your health. Thus, in this  activity you will track and record the number of grams of fiber you  consume per day using the Eat More Dietary Fiber(PDF). Compose a log reflecting your daily dietary intake. After completing  your fiber log, submit your results to your instructor.
