You may choose any one religion, or multiple religions, to make your point. You may discuss the way that different religious organizations, places of worship, religious leaders, etc. have responded to covid-19. You will have to cite your sources, and you are free to use non-scholarly sources but you must, absolutely must cite your claims and findings (this is not a research assignment, and, more importantly, nothing scholarly yet exists on this since this issue is happening live right now). News articles count, for example. There's no limit on how many you use.
Your opinions are fine in this piece, but they're not the point. They may be just 2-3 sentences max if you must insist on sharing them.
