Incorporating farm-to-table principles into a supermarket chain's
operations is a part of meeting current consumer demands.
Consumers are wanting more sustainable and locally grown products
such as produce. The COO would be communicating directly with
the consumers on what can be sourced locally, and also where the
other produce is sourced and from what company.
Some risks include a limited and volatile inventory. Transportation
and storage can be an issue as well. You would have to import some
produce because New England is not the best farmland. This would
help with seasonal produce, produce that can’t grow regionally, and
volatile inventory issues.
Data, communication, and implementation are very important when
working with the supermarket and local farmers. The supermarket
would need to communicate what products it needs and when they
need them in advance for the farmers to meet the demands. The
farmers would have to communicate any issues to the supermarket.
