• The entire resource in soft water represents only 1% of the entire water on the planet and this one is not equally distributed, that is why accessing to it is becoming a real preoccupation and challenge.

The Tea • N°2 most consumed beverage.
• The culture of the tea come from China from about 3000 BCE, but mainly spread around the world by the British (the afternoon tea-time).
• The tea is a beverage obtained by infusing dry or fermented leaves and leaf buds from the tea plant (Camelia sinensis) in hot water.
• Tea is usually considered very healthy as it contains: theine, tannin and antioxidant.
• Do not be confused with blossom and herbal infusions.
• It can be drink hot or cold, with sugar – lemon - milk or not.
• Countries that produce tea are: China, Japan, India, Nepal, Sri-Lanka, Taiwan, Korea, some African countries where the climate play a major role within the production. It is growing in a humid and hot climate and can grow from sea level until 2’100 m altitude.

The Tea
The major consumed type of tea are: • Black tea or red tea in China (come from dried
and oxidize tea leaves, it can be also smoked as Lap-song tea).
• Green tea (the oldest and original way, the small leaves could be very expensive as Longing tea, in Japan it is made as a powder called Matcha tea).
• White tea (only the buds are used to make it). • Yellow tea (very difficult to find it outside China). • Oolong tea (one of the most complex in term of
aromatic extraction and can have some smoky flavor).
• Pu-erh tea (originally come from the Yunnan province and it is a fermented tea, this ).
• Rooibos (originally come from S.-A. and have no theine, but a lot of antioxidants).

The Coffee • N°3 most consumed beverage.
• Historically the cultivation and the trade of the coffee come from the Arabian Peninsula almost 2000 BCE , it is from there come the name of the most famous and high-quality coffee “the Pure Arabica coffee”.
• In the 17th century, coffee became very popular in Europe. The Spanish, Portuguese, French and Dutch through their colonies started to spread the agriculture and culture of the coffee around the world. But it is the Italians that develop the art of Coffee ritual – this is the job of the Barista to make and serve a coffee to the perfection.
• The coffee is a beverage generally obtained by brewing terrified and grounded coffee beans with hot water (French press, filter and Turkish method) or by percolation (Italian method).
• It can be drink hot or cold, with sugar – milk - flavor or not.

The Coffee • Major countries producing coffee are: Brazil, Vietnam, Colombia, Indonesia, Ethiopia, Honduras, India, Uganda,…where the climate play a major role within the production.
• Optimum growing conditions must possess cool to warm tropical climates, a rich soil and can grow around 1500m above sea level. The plant is very sensitive to pest disease and a constant care need to be provided.
• Coffee beans are obtained by the torrefaction of 2 major type of coffee beans, Arabica for the aroma & delicacy and Robusta for the body & structure. The purity and temperature (between 86 to 90°C) of the water is very important for making a quality coffee.
• Drinking coffee can facilitate your digestion, it is diuretic, can help to mitigate headaches, accelerate pulse with low blood pressure, reduce heart strokes, keep you alert and can help to stimulate concentration. All this thanks to the caffeine, antioxidant, tannin and precious oil you can find in the coffee beans.

Juices & Derivates • N° 4 most consumed beverage, the Juice market is divided between real fruits juices, concentrate juices and synthetics flavor juice drinks.
• Major juices flavor are: orange, apple, grapefruits, pineapple, tomato, grape, mango, cranberry … .
• Fresh juices are healthier if freshly made as contained nutriments and vitamins but can easily get spoiled if not store properly. Those ones can be done either from fruits ore vegetables. They have a higher cost and sale price, require manpower to make it.
• Industrial juices are made either from a base of concentrate juice or powder. The advantage are: it has a microbiological stability, longer shelf-life, ease to produce, economy in packaging – transportation – distribution – conditioning (cost effective). Disadvantage are: loss in natural flavor and vitamins- nutriment, require to add preserving agents, high temperature process can change aroma and flavor compounds.
• Industrial juices and derivates are often considered unhealthy, as they possessed high % of transformed sugar.

• N° 6 most consumed beverages, the Soft, Soda and Energy drinks market is also famous for some other brands as Sprite, Fanta, Schweppes, Monster, Dr Pepper, Gatorade, Watson, Nestea, ….
• Coca Cola (1), Pepsi (2) and Red Bull (3) are sharing the top position of the best beverage brand value.
• Originally, we can trace the early roots of Softs drinks over 400 years ago. They were created and mainly launched from some pharmacy's shops, as they were considered as a kind of medicine and good for health du to the adjunction of CO2 in the decoction.
• Soft drinks became quickly a logical alternative to alcohol beverages and considered as safer and better taste compare to the regular water. They are very cost effective and cheap, long shelf life, easy to pack - store and easier to access than drinkable water.

• Major soft, soda & energy drinks flavor are: orange, cola, lemonade, lemon, lemon tea, peach cherry, red-berries, mango, grenadine, exotic fruits… .
• Soft drinks are called "soft" in contrast with Hard alcoholic drinks. Soft drink are any of a class of non- alcoholic beverages, usually but not necessarily carbonated, normally containing a natural or artificial sweetening agent or substitutes for diet drinks, edible acids, natural or artificial flavours, and sometimes juice (Britannica). Soda drinks are carbonated soft drinks.
• Energy drinks are a type of drink containing stimulant compounds, usually caffeine and sugar or substitutes, which are marketed as providing mental and physical stimulation (Wikipedia).
• Soda and energy drinks are often considered as unhealthy, as they possess a high % of sugar.

• Most people will order a non-alcoholic beverage rather than an alcohol one (the motivation could be driven by: health consciousness, religious, law and regulations, price,…).
• Non-alcoholic beverage could be highly profitable and cost effective (think of the Starbuck model).
• Could offer a wide range of possibilities (as mocktails, smoothies, milk-shake, … as alternatives to the traditional and classic choices).
• Like food and wines, premium products make the difference, but they are more expensive, need more attention and need to be store properly.
