PHYTOCHEMICALS
Phytochemicals are molecules found in plant foods. Most phytochemicals are plant pigments and give color, scent, and flavor to fruits, vegetables, and whole grains. These molecules are not considered essential nutrients but have antioxidant or hormone-like actions. Scientific research has shown that phytochemicals provide health benefits in the human body: some have antioxidant effects, some have been shown to help in the detoxification processes in the liver, while some are involved in gene regulation. Fruits and vegetables that are dark green, yellow, white, blue/purple, orange, or red are great sources of phytochemicals.
