HOSF 2062 Marriage of Food and Wine
FOOD & WINE PAIRING ASSIGNMENT (30%)
Teams will be established in the first week. You will work in pairs and will chose your own
team. Students will self-enroll their team on Blackboard under Team Creation.
In this course assignment each team will develop a Canape Menu, consisting of, 1 cold and 1 hot
Hors d’oeuvre per team, to match a grape variety you will select from the list provided.
VALUE: 30%
DUE DATE: Week 6, class 6a
OBJECTIVE:
To successfully complete a team project using:
- organizational and time management skills
- budgeting, cost control and purchase planning
- wine theory, and pairing rationale
- creativity and presentation ideas of the recipes
The team must complete the required project with:
a. Cover page – group number, names and student ID numbers
b. Menu – all items with a short descriptor
c. Wine description, which will include winery location and its terroir (climate, elevation,
soil)
d. Wine and canape pairing rationale
e. Recipes for each menu item, yield 10 pieces, 50g each (in Metric) MS Word format
provided (file titled Recipe Blank)
f. Requisition with costing per recipe – MS Excel database provided (file titled Masterfood
req)
g. Illustrations of the canapes – photos, or drawing
h. Budget - not to exceed $6 for 10 pieces hot, $6 for 10 pieces cold
This menu package is to be presented in a professional format and will be evaluated for:
a. Presentation (10%)
b. Spelling (5%)
c. Menu originality and creativity (20%)
d. Recipe accuracy (20%)
e. Wine & canape pairing (25%)
f. Requisition (quantities and budget) (10%)
g. Illustrations – photos or drawings (10%)
