A. We plan to open our full-service café in San Francisco, California.

B. The café will be located on 530 North Point Street, San Francisco, CA in Fisherman’s wharf district.This area is known as a tourist district, which has a high volume of people going through the area on a day-to-day basis from hotels, restaurants and stores. This property houses a number of successful businesses, and for that reason, we are going to create some changes to this existing café. The facility that presently exists as “Hollywood café” will need to be renovated to fit the ambiance that we are trying to provide for the customers at our operation. We would like to include a bright environment that has a lot of natural lighting and plants around the restaurant to give it an earthier vibe. We will also add an athletic clothing section into the cafe and change the menu items into healthy organic food.

C. Mission Statement: Warm-friendly café that provides allergy sensitive, organic, vegan and gluten free meals to raise people awareness about their health. To provide the highest quality of customer service as possible through a staff that exhibits stellar interpersonal skills. To keep the café a clean, respectful, and friendly environment for all patrons that enter our doors.

D. List of Goals:

1)   The café will provide healthy, organic meals with high nutritional value in the menu. We will also provide a menu that is friendly to special diets for individuals that are vegan and/or have allergies. By putting an asterisk next to a variety of our gluten, nut, and dairy free dishes, it will be easier for the consumer to make their meal choice based off of their diet. Gluten free, organic, vegan, and allergy friendly meals will be offered at affordable prices. In addition, we will include breakfast and lunch specials that will change on a weekly basis.

2)   In order for us to provide an excellent customer service, we have to hire a sufficient number of employees to cover shifts and maintain a fast paced, extraordinary service. We will always make sure to ask for customer feedback to make sure everything is running smoothly. If a dish is not made to a customer’s liking, we will be sure to do whatever it takes to make sure the customer is satisfied.

3)   To keep the restaurant clean, our café staff will have to work well as a team in order to make sure that tables are cleared quickly and efficiently to eliminate a wait time for a table. Moreover, we will make sure employees display a high exhibit of cleanliness, personal hygiene and food safety. In doing so, we will provide a ServSafe certification class to the employees to assure high quality of cleanliness and skill. To assure our staff portrays the utmost friendliness, we are requiring that all staff greet customers and treat them with respect and compassion.

Step 4- Narrative Concept

We have designed a café that is fully staffed and offers nothing less than the highest quality of service and food. We offer an athletic clothing section in our cafe that targets our market of health conscious consumers. The clothing section/ athletic accessories separates us from other cafés by creating an experience within our store. Our café will be on a street front, however, it will not look like your average café. The windows in the front will be removable. This will allow the warm California breeze to flow throughout the restaurant (given that the weather is warm and pleasant) and provides a section that is similar to a patio for those who care to enjoy the weather while they enjoy their meal. Deeper into the restaurant, there will be large wooden fans that will circulate the breeze throughout the restaurant. Our café will give a relaxed, earthy ambiance with our warm accents of color from the decor and furniture.

We will serve our food in eco-friendly materials, thus, eliminating the usage of plastic. Our beverages will be distributed to our customers in mason jars, with paper straws. Our sandwiches and salads will be presented on white bowls and plates, which will make the colors of our fresh ingredients really stand out. Our utensils will all be plant based utensils to advertise for the reduction of plastic usage.

Our café location is 530 North Point Street, San Francisco, CA. We are in a highly populated location, which will attract many locals and visitors. We are taking the outline of a café that presently exists and we are modifying it to fit the design of our café. We will add all our new furniture like wooden tables and white chairs. We are going to repaint the walls a neutral egg shell color to bring warmth to the room. In addition, we are going to install new light fixtures that can provide a dimmer light. We are going to purchase artwork of San Francisco on the wall from local artists. We are also going to purchase plants to tie in our eco-friendly environment.

We take pride providing an eatery that offers gluten free, vegan and allergy friendly meals, in addition to offering lean meats and fishes. Our menu items will be plated beautifully, as they will be colorful, nutrient dense and delicious. Our healthy spin on our menu will attract individuals that are living different variations of a healthy lifestyle. By catering options to all populations of food sensitivities, we want everyone who decides to eat at our facility to feel welcomed, understood, and accepted. Our café will offer salads, sandwiches, soups, eggs, fruit, coffee, and tea. One of our sandwiches that we are offering on our lunch menu is our veggie sandwich, which is available to be ordered on a few different types of bread such as gluten free bread, whole wheat, and rye bread. The vegetables that are on this sandwich include roasted peppers, cucumbers, lettuce, tomato, and avocado mash. Our veggie sandwich caters to vegetarians, vegans, our gluten free clientele, or any customer that just wants to enjoy a vegetable sandwich. With every sandwich, we will give the customer an option of sides, which can include baked sweet potato fries, an apple, or a side salad. A breakfast item that we will be offering is our Two Eggs Any Style dish, where our customers can choose how their two farm fresh eggs are cooked. This dish comes with a side of homemade roasted potatoes and a side of toast. The eggs will promote our locally sourced menu and this will be an item that can be modified to be gluten free. All of our food is made to order and all baked goods are made by our well trained baker each morning. Because baked goods have a shelf life of two days, we would like to offer our leftover day-old baked goods to local food banks. By doing this, we are reducing food waste and also giving back to those in our community that are in need.   

We are striving to connect to the health-conscious consumer and provide them with a relaxed, organic atmosphere. We want to portray positive energy through our food, service and environment. Our service is fast, friendly and personable. We want to build relations with our customers to develop regular customers that know and love the operation that we have. Our high quality service will have our customers’ meals ready in about fifteen minutes after placing their order.

We will have three chefs that have a respectable amount of experience in cooking healthy dishes. In addition, we will have an on-site baker that makes our homemade bread for our sandwiches and other treats. Our wait staff will be well informed about every dish that we include on our menu. Our café operates in a smaller location; thus, we will need one server for every four tables. Each server will be given a section that they are to take care of each shift. In order to keep our service running smoothly, we will have a hostess that will seat customers to their table, one food runner that will assist in the journey to get the food to the tables, and two bussers to help clear tables.
