Diet Planning Assignment NUTR 132, Fall 2017

Objective: To develop a 2-day meal plan tailored to the student's individual dietary goals and standards, in accordance with dietary recommendations. The second part of the assignment involves an in-class discussion activity.

Overview: For this assignment, you will plan 2 days of menus that will meet individual goals for nutrients and food groups. These will be entered into the MyPlate SuperTracker application to determine nutritional adequacy. Lastly, you will answer questions related to the diet planning process. In class on week 15, students will complete the in-class portion of the assignment.

Instructions: 1. First, consider your daily food selections and eating patterns. The 2-day menu you create

for this assignment will be based on your current habits. a. You will need to justify and explain your meal selections, so make sure you are

modifying and planning your diet in a realistic, practical manner. b. Be sure to include foods you would actually eat, and dishes with multiple food groups

and ingredients, rather than just foods that fit within a single food group. Points will be deducted for menus that are overly simplistic or unrealistic.

2. Create a profile on MyPlate SuperTracker. Navigate to https:// www.supertracker.usda.gov/.

a. Select ‘Create Profile’ from a dropdown menu in the upper right-hand corner of the screen.

i. Step 1: Choose a profile name you will remember, and enter in your information. Choose the Maintain Your Weight option. DO NOT enter a personal calorie goal.

ii. Step 2: Register your profile using an email address. This is an important step, as you will likely need to access your data several times.

iii.Step 3: Click submit. b. A MyPlan screen will pop up. Save this page as a PDF (print, then select Save as PDF

as your printer). Use the MyPlan to help you plan out your 2-day menu. Be sure to review the Tips for each category, and click ‘Additional Guidance’ at the bottom of the page for more information. There you will find more tips and hyperlinks to more information.

3. Plan your 2-day menus. Your menus will need to meet the parameters listed below. Points will be deducted for not meeting the specified criteria. Use your MyPlan to guide your menu planning. See the next step for details on how to enter your foods into SuperTracker.

a. Goals for food groups (keep an eye on the graph and ‘Daily Food Group Targets’ to monitor progress as you enter in your foods):

i. Meets minimum targets for all five MAJOR food groups (grains, vegetables, fruits, dairy, protein foods)

ii. More than 50% of grains are ‘whole grains’ iii.Include at least 3 out of 5 of the vegetable subgroups over the course of the 2

days (you do NOT need to meet the vegetable subgroup targets)

b. Meet some of your nutrient goals (click on the tiny ‘Nutrient Intake Report’ hyperlink above the Daily Limits display to check in on your progress toward meeting your goals):

i. Meet total calorie needs within +/- 10% of estimated needs ii. Meet macronutrient ranges for percent (%) calories for carbohydrates, protein,

and fats iii.Meet or exceed fiber needs iv. Meet needs for selected minerals (on the Nutrients Report, Status column

should say OK): Calcium, potassium, zinc, iron v. Meet needs for selected vitamins: Vitamins A, C, E, folate

c. Under daily limits for: i. Added sugars ii. Sodium iii.Saturated fat

4. Enter your menu into the SuperTracker website. Log on to your SuperTracker profile and select ‘Food Tracker’ from the ‘Track Food and Activity’ dropdown menu.

a. Select a date for Day 1. Enter your first food item in the box under “Food Tracker” where it says “Type your food here.” You may narrow your search findings by using the dropdown menu next to “Search.” Select the “Go” button to initiate search.

b. Select your food item from the search results by clicking on it. A new tab will appear titled “Food Details.” Tailor the food item by choosing the quantity, serving size, and meal. Add the item to your daily food intake by clicking the “+ Add” button. Repeat steps 4 and 5 for all the foods consumed on Day 1.

i. Having difficulty finding something? Click ‘Search Tips’ below the search box. There are lots of helpful hints and detailed instruction, including how to find your food item, entering recipes, and refining your search.

c. Select the next date for Day 2. d. Repeat steps 4 and 5 to enter foods for Day 2.

5. Tips for meal planning. Review the following list for helpful hints when planning your menus.

a. Use the MyPlan to guide your menu development. Remember to distribute food group goals across several meals and snacks. Include condiments, sauces, and seasonings.

b. Refer to ChooseMyPlate.gov for information on portion sizes, especially less familiar portion sizes such as grain ounce-equivalents and non-animal protein ounce- equivalents.

c. Meal planning is a trial and error process. Know that the menus you enter in the first time around will likely need to be modified after you run the Nutrients Report and Food Group and Calories Report to determine whether you met your goals. You may need to go back and adjust multiple times before coming up with a plan that meets all of the criteria.

6. Once your 2-day menu is finalized and you are satisfied that they meet the criteria above, generate reports from the SuperTracker.

a. Choose “My Reports” from the upper menu bar and click on “Nutrients Report.” View report from Day 1 to Day 2 and select “Create Report.” Export and save the report as a PDF.

b. Choose “My Reports” from the upper menu bar and click on “Food Groups & Calories Report.” View report from Day 1 to Day 2 and select “Create Report.” Export and save the report as a PDF.

c. Choose “My Reports” from the upper menu bar and click on “Meal Summary Report.” View report from Day 1 to Day 2, then under “Choose Meals:” select “All” and then click, “Create Report.” Export and save the report as a PDF.

d. You will need to turn in the following to the BeachBoard Dropbox labeled, ‘Diet Planning Assignment’:

i. Nutrients Report ii. Food Groups and Calories Report iii.Meal Summary Report iv. You DO NOT need to submit ‘MyPlan’

7. Answer the questions below. You will upload this document with your saved responses to the BeachBoard Dropbox for the Diet Planning Assignment.

Diet Planning Reflection Questions

1. Discuss your 2 days of meal plans. Provide rationale for the foods you selected, including how they could be worked in to your current routine and schedule. Discuss any changes you had to make to your food selections and meal timing in order to align with dietary recommendations. Minimum of 100 words.
