Your journal is to allow you to pursue reflections from this course in a way that you find meaningful. So there is considerable flexibility allowed in how you fulfill this assignment. You may write some of this as poetry for example. That said, at least some of the entries should indicate that you have read the course material or watched the videos.

Some of you my pursue a topic like the meaning of life, the philosophy of love, or questions of God's existence, and write on what different philosophers have written about this, along with your own reflections.
