Comment on the information on Poultry Processing reviewed as part of the Learning Activity for this unit.

I just finished working on a wind turbine construction project in Hereford, TX.  There are somewhere in the area of 1.5 million to 2 million cows in the area surrounding Hereford.  Many of our new employees came from the cattle processing industry.  They came with stories of how their hands were so damaged by digging out the various items from inside the cows.  Because these are low skilled workers, they companies paid little attention to the actual working conditions and how they affected the employees.  What are some of the things that might help these workers interact with their environment in a better circumstance?
