Limitations on Trans Fat

Proposed to: University of Denver Proposal Review Committee

Proposed to: Cassidy Link

Trans fat, also known as trans-unsaturated fatty acids, that occurs in small amounts in fat from meat and milk. It became industrially produced from vegetable and fish oils in the early 1900s in order to be used for butter and now processed snack foods and fried food. Today, studies have shown that trans fats can increase the risk of coronary artery disease by raising cholesterol levels and causing systematic inflammation. In 2003, the World Health Organization recommended that trans fat should make up less than 1% of an individual’s diet. In 2018, they implemented a step-by-step guide to eliminate trans fats produced industrially from the food supply. In many countries, there are legal limits on how much trans fat a product can contained, and most trans fat is being replaced by saturated fat. The topic I will be discussing for my research will be the impact of trans fat on global health, and the related laws and regulation that are in place. I will interview doctors that specialize in the health risks of trans fat in order to understand a first-hand experience of how trans fat has affected people medically. I will utilize research from the US Library of Medicine National Institutes of Health and the American Health Association in order to learn more about the health risks of consuming trans fat and its affect of the population.
