RE: Proposal to Include More Vegetarian Options
Proposal
After taking into account both staff and student input, I have prepared a proposal to expand the dining
options at Starling Cafeteria. The new meal options will address student requests for healthier options
and bring in additional customers.
Health Conscious Customers
Starling Cafeteria has maintained high quality meals but according to diners the menu has grown stale.
The meals favor high sugar and fat content while lacking in healthier options. This has slowly but
steadily reduced the overall number of diners by 0.5% to 2.2% on a monthly basis and in turn has
lowered monthly earnings.
Reinvigorating Meal Options
To combat the decline in diners and profit, I am recommending the inclusion of several vegetarian meal
choices over the next nine weeks. Two vegetarian options will be added each week for the first four
weeks, during the fifth week my staff and I will review what traditional meals have been ignored,
remove them and replace them with the vegetarian meals. During the remaining four weeks we will
phase out some of the sweet desserts with fresh fruit, granola, and other healthy selections.
Below is the proposed time table for each aspect of the transition.
Cost
The cost to initiate the transition:
Weekly Produce Cost: $4,000.00
Advertising on Campus: $200.00
Total Cost: $36,200.00
Advertising will be necessary to inform visitors of the changes taking place.
Conclusion
By making the adjustments listed, we will regain the diners we have lost and reduce food costs after the
initial nine weeks as we will have eliminated the least ordered meals. After six months with the new
menu, I predict we will no longer see a decline in diners and can expect a reliable growth of 3% to 4% on
a quarterly basis.
Respectively, I am asking for you to approve my proposal within the next three weeks. This would allow
me the time needed to get in the new produce in stock and train the kitchen staff before the Spring
semester starts.
