B1. Industry History: (EXAMPLE)

From the beginning of time, baking has been a staple in society to prepare meals and the luxury of desserts. As young children up through adolescence we are taught to cook food so that we can eat and help satisfy our growing appetites. The luckiest of us were able to bake cakes or cookies with our grandparents or our parents and have fond memories of flour and sugar spread all over the kitchen countertops and the smell of cinnamon in the air. With cookies there are so many possibilities from flat to fluffy or small to large that the simplistic design of adding flour, oils, sugar, and baking powder is a catchy recipe that any level of baking expertise can design and create. The historical relevance of cookies can date back to the beginning of time as they were found to be an easy item to travel with that was considered a food source that would not spoil or become rotten and inedible. History tells us that the cookies were known as hard flat discs that weren’t sweetened with sugar and were just something travelers could take along with them as sustenance for their long journeys. (Stradley, 2016) These hard discs were able to stay edible for years if they were stored properly for the journey they were taken on. Dating back to the Persian times in the 7th Century, sugar was introduced to the cookie recipes and people started to enjoy sweetened cookies or “biscuits” as they’re often called throughout Europe. It is believed that cookies were extremely popular during the renaissance era as they were considered small delicate cakes that brought elegance to any affair they were served at. (Stradley, 2016)Throughout Europe in the 17th and 18th centuries, baking was considered an actual profession. To become a Master Baker people were required to complete years of an apprenticeship and work their way up to journeyman and eventually Master Baker before they were allowed to sell any of their baked goods in the markets. The profession of Master Baker and the numerous bakeries were governed by various associations that allowed the different people to complete their apprenticeships and produce their baked goods based on the rules and regulations that had been set for their specific area. (Stradley, 2016)Cookies were brought to the United States of America through the Dutch settlers that brought their recipes along with them when they settled in the New Amsterdam colony in the late1620’s. Several of the colonists brought different spins on the cookie recipes and added their owncultural flair to each kind. The idea of adding butter came later in history around the 18th century, changing the composition of the cookies to a fluffier version. (Davidson, 2006) Many countries have different types of cookies that are referred to by different terms. For instance, the name “cookie” comes from the Dutch term of “koekje” which refers to a little cake. (Davidson, 2006) By switching a few letters around the United States known term of “cookie” appeared. Over in Europe cookies are often referred to as “biscuits” because when they were first introduced, they had a harder crispier texture rather than the fluffy soft version in the US. (Davidson, 2006) As people have travelled from one country to another, they have come across several different ways to prepare and plate cookies from the simple popular chocolate chip cookie that is baked in a traditional oven to the popular no-bake variety that is simply boiling on a stove and letting cool until it’s hardened. This travelling has also expanded the different varieties and recipes that are now found worldwide. Cookies have come such a long way in the past century and the varieties are endless. For our cookies, we hope to stamp our brand into the history books as the custom-made designer cookies from a little bakery in Gillette, Wyoming.

C2. Industry Analysis: Construction spending in the United States has been increasing at an annual rate of roughly ten percent. The graph below represents the amount of money spent annually on construction projects in the United States between 2011-2015, the statistics for the graph were obtained from the US Census Bureau (2016). The trend doesn’t stop in 2015, as of September 30, 2016 total construction spending in the United states was at $863.2 billion for the year. Compared to 2015 during the same time period spending was $826.8 billion, a 4.4% increase so far in 2016 (U.S. Census Bureau, 2016).An increase in construction spending doesn’t mean it is being spent on countertops, but when analyzing the sales of dimension stone is factored in, it supports the idea of starting a countertop fabrication and installation business. The sale of domestically quarried dimension stone, which is defined by the U.S. Geological Survey as “natural rock material quarried for the purpose of obtaining blocks or slabs that meet specifications as to size (width, length, and thickness) and shape”, increased from 2014 to 2015. In 2014 2,470 million tons worth $459 million were sold or used, compared to the 2015 numbers of 2,510 million tons worth $474 million (U.S. Geological Survey, 2016). In addition, the United States imported an additional $2.37 billion worth of dimension stone in 2015, compared to 2014 which was $2.23 billion. Even though these numbers are not drastic increases, they still point to a trend, the United States is back to building, and those in the construction industries have opportunities that have not been around since the housing bubble burst in 2008. The final trend to analyze is the Phoenix new housing market, to ensure the increases in construction monies spent and dimension stone sales are occurring in the same market area The Granite Guys wish to serve. According to Mike Sunnucks Senior Reporter for the Phoenix Business Journal new home sales have increased by 35.4% in 2016 as compared to 2015, respectively the actual number of sales are 7,012 and 5,179. Building permits have also increased in 2016, to 9,358 from 7,821 in 2015 over the same time period, an increase of 19.7%
