1. Business Case
1) About the pop-up restaurant concept
A pop-up restaurant is a unique and special type of restaurant that provides a unique experience to its customers. Due to the unique food and atmosphere, this type of restaurant has become very popular in various countries (Qsrautomations, 2021). The concept of a pop-up restaurant is that it serves a variety of food and drinks for a short period of time. The food served at this type of restaurant is usually seasonal and out-of-the-day. Getting the right food can be a challenging and time-consuming task. With so many options and dietary restrictions, it can be hard to decide where to eat and what to drink. People also tend to get bored of the same old places. Pop-up restaurants can help us find new friends and develop new tastes. A pop-up restaurant can help people find the food that they're looking for. The goal of this type of restaurant is to give people a new dining experience with more food options, meanwhile increasing the revenue in a relatively short period of time (Toast, 2022).
2) Current Problem
Students and faculty staffs in Centennial College currently don’t have many choices for lunch and no place to have dinner in the campus.
The only café in the buildings is Tim Hortons, it has very limited choice of hot drinks and cold beverages, and it doesn’t offer lunch nor dinner. There are only 3-4 types of sandwiches in the food menu. It closes at 3PM, and there is always a long line for waiting to order. The nearest restaurant around campus is around 1 KM away. Students have classes during the day, classes in the afternoon usually start at 12:30 PM and the last one in the morning finishes at around 11:30PM, which makes the lunch break shorten to 1 hour. In the afternoon the last classes finish at around 6:30 PM, they also need a place to have dinner. Students and staff are seeking for a place to have lunch and dinner with a variety of food choices, and to spend some time in a good dining environment.
3) Project Background
As part of the “Better Centennial” program, the pop-up restaurant project is one of the key projects that supported by the executive team of Centennial College, which drives attention of the board of directors of the college. From the president and the VP of Centennial College to the students and the faculty staff in the college, people are having high expectations and all looking forward to the opening of the pop-up restaurant in the marketplace.
4) Project Description
The project opening a pop-up restaurant for one week in the marketplace in Centennial College, where we will offer our students and school staffs with hot meals (lunch and dinner) and drinks, so that students and school staffs can have more food choices for lunch and dinner.

· Project Objectives: We will be opening a two-weeks pop-up restaurant in the marketplace of Centennial College Progress Campus, where students and school staff can enjoy hot meals and drinks. This will allow them to have lunch and dinner before and after class. It also provides a good environment for students and school staff to spend time with each other and gather. Bring more choices of food for students and college stuff in the Centennial College in the Progress Campus.
· Main Project Success Criteria: The opening of the Pop-up restaurant on Sep.5th.2022. Increase the revenue of the marketplace of Centennial College Progress Campus by 15%
· Project Approach: Incremental approach. Break down for the phases and the timelines for the project: Phase I: Pop-up restaurant design and supplier selection (June 1st, 2022 – June 30th, 2022) 1) By June. 15th., 2022: · Pop-up restaurant design completed 2) By June. 30th., 2022: · Pop-up restaurant suppliers (construction company, decoration company, order, and payment system suppliers) selected and contract signing completed · Marketing solution supplier selected and contract signing completed

· Current Situation and Problem/Opportunity Statement
Tim Hortons is the only café in the buildings that serves coffee and hot drinks. It doesn't have a full menu, and it closes at 3PM and there is a long line at the entrance, while the nearest restaurant is around 1 kilometer away. During the day, students have classes from 08:00 AM until 10:00PM, so students need a place to eat throughout the day. This also includes breaks that students and staff have between classes. In addition to being unable to have a place to eat and drink, students and faculty members at Centennial College also don’t have a place to gather and spend time together. To address this issue, we are considering opening a pop-up restaurant in the marketplace.

· Critical Assumptions and Constraints
This project requires strong cooperation from a wide variety of people. A working group will be set up which will take care of the implementation of every detail of this project. An interior design company, construction company, food and drink suppliers, and a logistics company will be the main project implementation teams. Then we will hire the people needed for this project and we will provide all the necessary products that the restaurant will need. The biggest constrain of this project is the short time in which we have undertaken to realize it, as well as finding the necessary staff in such a short time.

· Analysis of Options and Recommendation
There are three options for addressing this opportunity: 1- Serve only fast food. This is the less expensive option but not the healthy one. 2- To contract a catering company which will bring different foods every day. This could bring a lot of facilities but would significantly increase the cost. 3- To create a cooking environment (kitchen), where fresh and healthy food can be cooked, with different menus every day. People using this space can eat healthy every day and feel like home. Based on the financial analysis, option 3 is the best option, adding the bar service which will contain a variety of products such as soft drinks, coffee, water, milk, and fresh fruit juice.

The estimated time for this project is Fall Semester 2022 Sept.5th with an opening event at the same day. The impact of this project will be assessed every semester for the first year and annually thereafter.

· Potential Risks
Delay on the constructions and decorations, on the testing of the ordering and the payment system, the unsatisfied revenue and the less popularity of the pop-up restaurants are all potential risk. As time is not in our side, we must start work as soon as possible so that everything goes as planned and for the project to be successful and completed on time, meeting the revenue increase target.
