What happens if you mix chemistry with cooking? The new science of molecular gastronomy is really taking off. Molecular gastronomy is a scientific discipline involving the study of physical and chemical processes that occur in cooking [1]. It deals with the transformation of ingredients in cooking, from a technical, social and artistic point of view. Famous chef Heston Blumenthal uses molecular gastronomy in his recipes to recreate modern classics like spaghetti Bolognese and fish & chips [2].
