Overview The goal of this PNP assignment is to help you see how you’ve applied your selected eating pattern (from PNP Assignment #1) over the past several weeks, as well as evaluate micronutrients. You will collect current eating pattern data, which will reveal your adherence (or not) to your chosen eating pattern from the beginning of the semester. In addition, you will calculate your micronutrient intake in PNP Assignment #1 and your current data for PNP Assignment #3 to compare and contrast these important data.
Instructions and Checklist
For this personal nutrition portfolio (PNP) assignment, you will complete and submit the following information for this assignment:
1. Step 1: Collect data for your current eating pattern for two (2) weekdays and one (1) weekend day (i.e., Saturday or Sunday) of data.
2. Step 2: Calculate your micronutrient/fiber intake for PNP Assignment #1 and PNP Assignment #3 (your current selected eating pattern).
3. Step 3: Identify your Top 3 foods for EACH day for EACH of the nutrients and fiber and record in the PNP #3 Top 3 Micronutrient/Fiber Rich Foods sheet. Note: You will do this for all 6 days (PNP#1 and #3 data collection).
4. Step 4: Reflect, compare, and contrast your baseline eating pattern and micronutrient/fiber data from PNP Assignment #1 to your current selected eating pattern and micronutrient/fiber data for PNP Assignment #3 in a minimum 250-word analysis.
5. Step 5: Complete 2 additional activities.

Note: As a reminder, this chart can be found in the NUTR 100 Forms (https://drive.google.com/drive/folders/1V5_4hq3m3Dp8dDWVctbYpkdIlNZfQFWm?usp=sharing) shared Google folder that we have been using for this course.
Step 1: Collect Data for Current Eating Pattern
At a minimum, you need to collect/assess your complete food and beverage intake (current selected eating pattern) over 3 days—2 weekdays and 1 weekend day (i.e., Saturday or Sunday). Don’t forget to use the exact dates/times for tracking.

What to Collect? The goal of the current eating pattern assessment is to see how well you have been adhering to your eating pattern of choice that was selected in PNP Assignment #1. Do your best to continue to apply your eating pattern of choice to your day-to-day food selections and meals.
Data You are Required to Collect/Document
If you have not done so already, copy the spreadsheet, NUTR 100: PNP #3 Food Intake and Micronutrients/Fiber Consumption Charts (Refer to the Instructions and Checklist section to copy the chart in preparation to use to collect your information.). Use the PNP #3 Data Collection sheet within the chart to track your food intake. Some of the items you are required to track on the PNP #3 Data Collection sheet include:
Exact dates including the actual day of the week for food intake for at least 3 days—2 weekdays and 1 weekend day (i.e., Saturday or Sunday)—though you can collect more data on additional days if you like. Time of day meals and snacks are consumed Food intake at every meal Snacks Meal/snack frequency Beverages (alcoholic beverages, water, etc.) Portion size Any added ingredients/condiments to your food item—don’t forget the mayo! Additional comments that will assist you with tracking and analyzing your data
As you are tracking your food intake, you may also want to track the amount of micronutrients (calcium, potassium, and sodium) and fiber included as this information may be easily accessible on the food labels. Refer to Step 2 in this assignment for more information about collecting this data as more guidance will be provided.

If you find that your food intake is ideal for your goals, you are welcome to add some additional information to your data collection such as the following:
how you are feeling when you are eating (stressed, happy, in a rush) include documentation if you are not eating your sleeping pattern (How long did you sleep? Do you feel rested?) exercise pattern (walking, gym workouts, other activities) and sedentary behaviors (sitting in front of television/computer, excess sleep) dietary supplement use

Step 2: Calculate Micronutrient/Fiber Intake for PNP #1 and PNP#3
Calculate your micronutrient/fiber intake for PNP Assignment #1 and PNP Assignment #3.
Evaluate your micronutrient/fiber intake and identify your Top 3 Foods for EACH day for EACH of the nutrients (calcium, potassium, and sodium) and fiber. HINT: If you are using a food label, a food item is defined as high in a particular nutrient or fiber when it meets or exceeds 20% of the Daily Value.

Calculate Micronutrients of Concern and Fiber for PNP #1 and PNP #3 1. If you have not identified the number of micronutrients (calcium, potassium, and sodium) and fiber intake in the PNP #1 and
PNP #3 Data Collection sheets, you should complete that now. You may use the food label, Food Data Central (https://fdc.nal.usda.gov/index.html) , What's in Food (https://www.nutrition.gov/topics/whats-food) , diet analysis software (such as My Fitness Pal), or do a web search for the information. When using Food Data Central, choose "Survey" options for your food item rather than the "Brand" options to see all nutrient data including potassium.
If Calcium is listed as % Daily Value, convert the percent (%) to milligrams. Calcium 30% from the label. The Daily Value for Calcium is 1300. Multiply 1300 by 30% (0.30) = 390 mg.
2. Using the data you have been collecting in the PNP #1 and PNP #3 Data Collection sheets, identify your Top 3 Foods for EACH day (PNP #1 and PNP#3) for EACH of the nutrients and fiber and add that information to the PNP #3 Top 3 Micronutrient/Fiber Rich Foods sheet.
Step 3: Identify your Top 3 foods Using the data you collected, identify the top three foods for EACH day for EACH of the nutrients and fiber, and record in the PNP #3 Top 3 Micronutrient/Fiber-Rich Foods sheet. Note: You will do this for all 6 days (PNP#1 and #3 data collection). See the example in the NUTR 100: PNP #3 Food Intake and Micronutrients/Fiber Consumption Charts (https://docs.google.com/spreadsheets/d/1JxWSGK6HxOe-xFaoNIk46dEOcFpd2TGyZhCRUaBnUXc/edit?usp=sharing) sheet.
Step 4: Analyze (Baseline) Eating Pattern Data to Current Selected Eating Pattern
Compare and contrast your baseline eating pattern and micronutrient data from PNP Assignment #1 to your current selected eating pattern and micronutrient data for PNP Assignment #3 in a minimum 250-word analysis.
First, take a look at the data you collected from your baseline eating pattern data from PNP Assignment #1 and compare it to your current selected eating pattern for PNP Assignment #3. Evaluate the data and also take some time to reflect on your micronutrient/fiber intake.
Now, compose a minimum 250-word analysis, by commenting on the following items:
1. Did your PNP#3 intake meet the goals/requirements for the eating pattern you chose to follow in PNP#1? 2. Did your PNP#3 average daily intake meet the requirements/recommendations for each of the micronutrients/fiber
consumption? For example, have you reduced sodium intake or increased potassium intake? Are you meeting your calcium requirement? Are you meeting the recommended intake for fiber?
3. Explain how you are feeling generally about adhering to a new eating pattern. 4. Identify areas of improvement or other considerations for the future of your adherence to the eating pattern you have chosen
and to your consumption of each of the micronutrients and fiber. Be specific. 5. Give examples of what you could change to meet the goals/requirements for your food consumption and micronutrient/fiber
consumption. Keep in mind that you have approximately one more month to work on further changes. 6. Use the following table, Micronutrient/Fiber Resources, to assist you with identifying the foods you might enjoy that are high
in these particular nutrients (calcium, potassium, and fiber) or to avoid in the case of sodium.

Identify the top 3 water-containing foods from PNP#1 and PNP#3 based on your food intake data. Report your data in a table and submit a 100-word reflection on your personal water intake. Dive deeper (behavior chain): After completing your analysis of baseline and current eating patterns, step back and reflect more deeply. Create a behavior chain related to an eating behavior of your choice and include in your submission. Refer to the following article, Bridge the intention-behavior gap to lose weight and keep it off (https://www.health.harvard.edu/blog/bridge-the-intention-behavior-gap-to-lose-weight-and-keep-it-off-201103101729) , where you can learn more about behavior chains. Write a 100-word reflection on your behavior chain. Consider another eating pattern: Based on your analyses, how are things working out with the eating pattern you chose? If you were going to choose another eating pattern now, which would it be? In a thought experiment, write a 250-word reflection on how another eating pattern might be a better fit for you long-term. Make it meatless.: Choose a meal that contains animal-based proteins from the data you have collected and turn it into a meatless menu option. Then analyze the micronutrient content in your original recipe and the meatless version. Report your data and write a 100-word reflection on your observations.
