My name is Keisha Green and I reside in Dallas Texas. I currently work as a clinic aide in a junior high school. I am the mother to five wonderful children Kayla (17) Eric (16) Faith (15) Jaiden (14) and Elijah (12). I enjoy being a mother and spending family time. I am currently studying for my bachelor's degree for early childhood education. I have experience working as a Kindergarten aide and I enjoy working with the little ones. I also have worked with children with all types of disabilities. I have been in my health care position for over seven years and currently made the decision to go back to being active in the classroom. I have been a vegan for the last two years due to my mother’s diagnosis of diabetes. It runs in my family and makes the decision to stay healthy for me and my kids. One of the best things about being a mother is being a sports mom! My oldest daughter graduates next year and I am super excited! My kids and I tend to stay away from a lot of processed foods and sugars. I am very big on eating vegetables and drinking lots of water. 

One of my favorite quick snacks to make for my teens are apple donuts! The recipe is very quick and basic and most importantly healthy. 

· 1 medium apple 

· 3 tablespoons almond butter

· 2 teaspoons shredded unsweetened coconut. Remove apple core with an apple coring tool. Slice the apple crosswise into 8 thin rings, about 1/4 inch thick. Spread each apple ring with almond butter. Sprinkle with coconut.

Serving Size: 

2 rings each

Given that I have hungry teens I always use at least three medium size apples. You can adjust the apples for the recipe depending on how many servings that you are serving.
