Recipe for Rhubarb Cake

1. Half cup butter

2. One tablespoon baking soda

3. One cup brown sugar

4. Two cup rhubarb, diced

5. One tablespoon salt

6. One cup milk

7. One egg

8. Two cup flour

9. One tablespoon vanilla

10. Half cup nuts (optional)

11. Half cup brown sugar

12. One tablespoon cinnamon

Steps for preparation of the cake

1. Preheat the oven to 350 degrees.

2. In a bowl that is large, mix butter, baking soda, one cup brown sugar, salt, egg, milk, flour, vanilla and rhubarb.

3. Pour cake mixture into a greased baking dish.

4. In a bowl, combine half cup brown sugar, nuts and cinnamon.

5. Sprinkle on top of the cake mixture.

6. Bake for forty-five minutes (Paxton).

· Preheating the oven to 350 degrees ensures that the oven is ready at the temperature you want to bake the cake.

· Mixing the ingredients in a bowl that is large will reduce the baking time since the ingredients will be spread in a large surface area that will ease battering as compared to a small bowl.

· Pouring of the cake mixture into a greased baking dish will ensure that the cake does not stick to the bottom.

· A sprinkling of the brown sugar, nuts and cinnamon mixture will provide a coating to the cake.

· Baking for 45 minutes ensures that the cake is fully cooked. After the elapse of the 45 minutes, a toothpick is inserted in the middle of the cake. Once removed the toothpick will be clean with no particles of uncooked batter. This reveals you that the cake is fully cooked and ready for serving.
