In the following assignment, you will choose only one of the following special needs client scenarios listed below (A-Vegetarians, B-Athletes, or C-Elderly) and follow the directions as noted for that particular client. Post your sample menu and profile to this Discussion Area by Sunday, September 20, 2015. Review and comment on the responses of at least two other students by the end of the week. Your comments should focus on the variety, texture, fiber, nutrient content, food combinations, and the balance of carbohydrates, fats, and proteins of the meal plans. Be sure to focus specifically on the following depending on the client your peer chose:
Section A: Meal Planning for Vegetarians
Section B: Meal Planning for Athletes
Section C: Meal Planning for the Elderly
